Labor Day in North Carolina

For the Labor Day weekend, Travis and I flew out to visit our good friends, Mark and Sarah, and their 2-year-old daughter, Ellie. They live in Charlotte, NC, but we actually didn’t spend much time there. Our flight left at 6:15 on Friday morning (meaning our wake-up call came at 3:30!) and everything went smoothly. We were relieved to not have to check our suitcases at the gate due to full overhead bins.

We arrived in Charlotte around 3 pm and Sarah and Ellie picked us up from the airport. Mark met us at their house and we spent the evening catching up and eating a delicious home-cooked meal – cheesy beer chicken and noodles, garlic bread, and cooked broccoli. It was so good, I went back for seconds. Even though in Denver time it was only 7:30, we went to bed at 9:30 Charlotte time. We were exhausted!

The next morning, we got up around 7:45, took showers, ate breakfast and packed up for our trip up to Sarah’s parents’ cabin in the Smoky Mountains. It’s in Transylvania County, which is also known as the Land of Waterfalls. The elevation increases 2,000 feet in 4 miles and it rains 80 inches a year, so it’s technically considered a rainforest (and it definitely looks like one with all the kudzu growing everywhere!).

On our way up to the cabin, we stopped at Sky Top Orchard to pick apples and eat some apple donuts. I hadn’t been apple picking in forever so it was fun to be there, but I have to admit that the humidity slightly ruined it for me. I’m not cut out for that anymore! It just makes me feel exhausted and sleepy. So we only stayed at the orchard for about an hour and a half.

Travis was the wagon puller.

Of course, we had to get some Honeycrisp. The orchard had actually picked all the Honeycrisp trees clean that morning but we found some decent ones on the ground and got them for 1/2 off. They were still delicious!

They’re such a cute little family! Sarah is pregnant with their second child, due in February. She finds out today whether it’s a boy or a girl!

After picking apples, we ate the sandwiches we brought and some fresh, hot apple donuts. They were so yummy – I could have eaten all 6 of them.

We drove another hour and a half on the windy mountain roads and then stopped at a roadside store that sells boiled peanuts. The store has been there since 1947 and is a tradition with Sarah’s family. All I can say is that I think boiled peanuts are gross. Travis said that he thought that when he first tried them too but he muscled through half the bag and then they started tasting good. I don’t know why he does that. I did not muscle through. I ate 2 and decided that they were not for me. Kind of like pork rinds. Ew.

Finally, we got to the cabin.

After we unloaded and chose our bedrooms, Mark, Travis and I took a walk around the neighborhood to see all the unique houses and pretty gardens while Sarah and Ellie napped. When we returned, we read and hung out for a while and then ate dinner – North Carolina-style BBQ, bean medley, and mac & cheese. We watched TV for a bit until I started falling asleep. I got my second wind to play 2 games of Scrabble and won the last game (though Mark would have won if he had remembered to play Qi, which is a special word for Chinese life force). Then it was off to bed.

The room that Travis and I slept in had french doors that opened out on to the screen porch, so we left the doors open at night to let the mountain air blow in.

We slept in until 9:30 both mornings we were there! That was one of the many great things about this trip – it was very relaxing. We got a lot of good time to just hang out and talk with Mark and Sarah and be amused by Ellie. She is so cute and hilarious. I hope our kids are as cute someday!

Sunday morning, we ate breakfast (banana pancakes made by Mark) and then hiked up one of the mountains nearby. The hike was no joke! It was challenging for me, I think mostly because of the humidity (it’s amazing how much that makes it hard to breathe just like high elevation), but maybe also because I hadn’t hiked since the Fourth of July. I have discovered time and time again that triathlon/running shape does not equal hiking shape. I must admit that I was very frustrated on the way up during this hike because it seemed like everyone else, including Sarah who’s pregnant, was in better shape than me! They were just moseying up the mountain while I was hacking up a lung. This just reveals my pride in being “athletic” – something for another blog post.

Nonetheless, we made it to the top. The view was definitely worth it.

I called this a Beach Project picture because it was so bright where we were looking (though you wouldn’t guess it from the clouds) that I could barely keep my eyes open. That’s why I look slightly weird.

I’m not particularly fond of this picture but I’m including it just to show the massive sweat stains on my shirt. I was disgustingly sweaty from the hike up. Ew. Ew. EW. Luckily my shirt was dri-fit so the sweat evaporated fairly quickly.

After our hike, we grabbed some snacks to tide us over and went to a place the locals call “Little Sliding Rock.” Instead of explaining what it is, I’ll just post pics.

It’s a rock you can slide down. Mark and Sarah said that this was the busiest they had ever seen it so I only went down twice. The first time, a couple of little girls starting sliding down from the deep hole (see below) right as I was coming down and I ended up running into one. I pulled her to the surface to make sure she was ok. (She was.) Whoops.

That’s Travis going down the rocks. In the upper right, you can see kids hanging out in the middle of the rock. That was actually a huge hole – so deep that kids were literally jumping off the rock into it. It was also a popular hang out spot although the water was so cold, I didn’t really see the fun in hanging out in it.

Travis and Mark went down several more times and even pushed each other down so they’d go faster. Boys.

Nice and refreshed, we went back to the cabin for a nap and dinner. We had steaks with sweet potatoes and salad. Another delicious meal! Mark and Sarah really fed us well. 😉 I also had about 2 Mike’s Hard Lemonades a day. Calories don’t count on vacation, right? After dinner, we got sucked into watching a Dateline Mystery. Sarah said that SNL has done a spoof on the narrator guy. He was pretty hilarious to listen to. I’ve never heard so many rhetorical questions be answered by the person who asked them. Then we played 2 more games of Scrabble and hit the sack.

I woke up around 4 am to what I thought was a really loud fan in our room. Nope, it was rain. We had known it was supposed to start raining during the night and continue all the next day – in fact, the weather reports listed the chance of precipitation as 100%. There was no chance it was not going to rain. And they were right. It rained all day. I welcomed it, though, because it was such a nice change of pace from Colorado where it has been 95 degrees and sunny everyday. (Who knew that cloudy days once in a while could be nice?)

We just kind of bummed around the cabin until late morning and then headed over to Highlands, a nearby town. We shopped for a while, ate lunch accompanied by delicious white hot chocolate, then went back to the cabin. The boys went to a waterfall and swam in the natural pool at the bottom while Sarah and I enjoyed listening to the rain and reading. When they got back, it was time to pack up and head back to Charlotte.

On the drive back, we stopped for a true Southern meal at Waffle House. There are Waffle Houses out here in Denver but somehow, it just doesn’t seem the same. I had an egg and cheese biscuit with a side of grits. You could not have fit one more plate on our table, we had so much food!

We got back to Charlotte around 10 pm, just in time to go to bed. The next morning, we showered, ate breakfast and left for the airport around 10:10… we were supposed to leave for the airport at 9:30 for our 11:30 flight but that didn’t happen. The security line was ridiculously slow – I get so frustrated at the security personnel. They lolligag and take their sweet freaking time while the rest of us are frantically trying to get through because we’re about to miss our plane. To add to that, I forgot I was wearing a belt and didn’t take it off when I went through the full-body scanner (that’s the first time I had to do that!) so I required an additional pat down. As if that wasn’t bad enough, I had to stand there for a couple of minutes while the security lady watched another guy go through the scanner. I wanted to be like, “Hello! I am going to miss my plane. Can you hurry the eff up?”

Travis and I ran to our gate and arrived just as they were starting to board. Whew. We made it.

Our connecting flight in Minneapolis was only slightly less eventful. When we got off our plane from Charlotte, I looked at the departures board and I swear it said our gate was C4 – on the complete opposite side of the airport. Since we had an hour and 15 minutes, we decided to eat lunch at Wolfgang Puck Gourmet Express. Despite the debaucle of their ordering system, I had a very delicious Chicken Tortilla soup with avocado and goat cheese – seriously, I will use that idea myself. The goat cheese melts so it’s like sour cream, only healthier.

Lunch eaten, we headed to our gate. Only it wasn’t our gate. It was for a flight to Philadelphia. Maybe it was C7? Nope. Hmmm… we went and looked at another Departures board.

Our gate was F9.

Are you joking?

We had to walk all the way back around the airport. Travis was mad. I was mad at his being mad, in addition to my mind reeling. What? How did I think it was C4? Did I remember that from the Charlotte airport – no, that was an A gate. Did I look up Charlotte instead of Denver? No, that gate was for a Philadelphia flight. Do I even remember looking at the Departures board? I must’ve because Travis said I did. 

A slight redemption came when we made it to F9 and there was a little old lady who was also at the wrong gate. The airline employee said that the gate had been switched and she now needed G17 instead of F9. Maybe that’s what happened to us?

Either way, we made our second flight as well. The only bummer was that they made us check our suitcases at the gate, and then proceeded to let people on behind us with their luggage. We were slightly annoyed. I am not impressed with Delta’s overhead bins at all. But they do give out free pretzels. Bins or pretzels? Bins or pretzels?

Overall, our trip to NC was very fun and relaxing. I hope to see Mark and Sarah again soon!

6 more weeks…

Only 6 more weeks of formal training (including this week) until my 2011 race season is over! I am so looking forward to doing more of what I’ve been doing this week:

1. Drinking alcohol. I have a pretty low tolerance to begin with, but add in training, and I get tipsy and a headache from even one glass of wine. This week, however, I’ve thrown caution to the wind. 🙂 I had 2 Mike’s on Sunday night, a glass of wine and a margarita on Monday, and then a glass of wine last night. And I’ve enjoyed it so much, I’ll probably continue that trend for the rest of the week.

2. Watching TV. I usually prefer reading because it at least makes me feel productive. But right now, I really love watching Drop Dead Diva, with occasional re-runs of What Not to Wear and Say Yes to the Dress thrown in. In a couple of months, it will be back to Bones and Desperate Housewives. And Travis has found 2 new shows he likes: Bar Rescue and Downsized.

3. Baking. I made zucchini bread Monday night and am planning to make blueberry banana bread next week. Mmmm…

4. Not exercising. It’s only been a few days since the race on Sunday but I still feel slightly guilty about no workouts. I’m thinking about a bike ride or a swim tonight. But we’ll see. I may have a glass (or two) of wine instead.

5. Staying up late and sleeping in. Not exercising means I can stay up to 10 or 10:30 and get up at 6 or 6:30! Glorious! It’s even more glorious when Charlie is in her kennel and doesn’t wake me up at 5 am.

Travis and I leave butt early on Friday morning for Charlotte, NC, to visit our friends, Mark and Sarah. (So excited!) We get back on Tuesday and then I’ll start back on this haus of a training plan:

The Crescent Moon Sprint Tri is the first race, the Denver Rock ‘n’ Roll Half Marathon Relay is the second. I’m sure my actual workouts will only slightly resemble this plan due to life getting in the way but it’s nice to have a plan anyway.

Packing and Pooping

Well friends, race weekend is here. In 2 hours, I will leave work to take my dog to the vet (more on that in a bit), then head home to pack up all of my triathlon gear and prepare for my trip to Steamboat Springs tomorrow.

Itinerary

I’m going to have coffee with my friend D in the morning (who is also graciously watching our pooches for the weekend) and then hit the road around 11. Due to a bike race going on near Silverthorne/Rabbit Ears Pass, I have to take the long way around, making my trip 3.5 hours, instead of 2.5.

No matter! I’ll be rocking the same mini speakers we rocked all the way to Yellowstone and back (since the radio in our Focus is still broken).

Heck yes!

Once I get to Steamboat, my plan is to head straight to packet pickup at the Ski Haus and then go check in at the hotel, where Travis will meet me on his return from counting cacti in Middle-of-Nowhere Roosevelt, UT (no joke). He’s been there all week. Apparently, this cactus is an endangered species. Meaning there aren’t a whole lot of them. They were batting .500 on seeing them during the course of a whole day.

From what I’ve heard, Steamboat has a rodeo every Saturday night. If it’s not too late, we might go check that out because I’ve never been to a rodeo. (Shocking, I know.) Otherwise, I figure we’ll just bum around downtown Steamboat, have dinner and call it an early night. Race wakeup calls come early – this one will be at 5:15 am. But usually I sleep so poorly that I’m rearing just to get up and get on with the show already.

And the other details will be saved for the Race Recap to come on Monday. 😉

Time Goals

Things this week haven’t gone *quite* as planned. Both Wednesday and Thursday, I only drank about 40 oz of water. I haven’t stretched since Monday. I couldn’t swim this morning because our gym was closed.

But regardless of all that, I do feel prepared. My time goals for this race are between 3:17:30 (stretch) and 3:32:30 (more realistic). Here’s the breakdown:

Why those times?

For the swim, I practiced 825 yards (750 meters) and finished in 21:20. Double that and you have 42:40. But if I wear my wetsuit (which I’m still debating about because the race website said the water is supposed to mid-60s.. BRRR!), I’ll be slower, since the suit limits how much I can bend my legs and therefore, how well I can kick and how fast I can go.

For the bike, I have averaged 16-17 mph in the other races I did this year and I’m definitely in better biking shape now than I was then (thank you Simms!). This bike course is downhill on the way out and uphill on the way back and the elevation map looks sweet (for the first half) and nasty (for the last half).

But the good news is that the elevation gain/loss is less than 200 feet and the steepest grade is a 2%. But… then I look at my route to work and it says those hills are a 2% grade as well. Crap it.

For the run, I have been running an average pace somewhere between 11:00 and 11:30 on my runs. But for some reason, I run faster after I bike. In the Greeley Tri, I managed a 10:21 pace and in the Boulder Sunrise, I did a 11:00 pace. So in essence, I’m looking for a miracle. I guess I’m still hoping that someday, I can get back to consistently running 10 minute miles as my slowest pace instead of my fastest. I try to remind myself that last year, I was consistently running 12:30s – so I have made progress.

This triathlon will be my longest workout ever by at least 30 minutes (if you don’t include hiking). My longest workout previously was my slowest half marathon, which I finished in 2:44:44.

Fueling

I plan on fueling on race day by eating my traditional bagel with peanut butter. I’m also going to try to eat a banana before starting, since this race will be so much longer than a Sprint. On the bike, I will eat 1 whole pack (6 blocks) of Shotbloks, with 3 blocks at 45 minutes and 3 blocks very soon before I get off the bike.

I will eat 3 more blocks on the run around the halfway point. I will also have another piece of bread with peanut butter on it in transition for me to grab if I’m hungry before heading out on the run, since Shotbloks are more to replace electrolytes than to fill you up.

And then, the best part, I’ll have an Athlete’s Honey Milk waiting for me at the finish line! I tried these for the first time at the Greeley Tri and loved them. Since they’re $2.50 a bottle, I only use them for special occasions – like this race!

Speaking of last night, and taking Charlie to the vet, and the pooping I mentioned in the title of this post, I had an incredibly disgusting experience when I came home last night. As I walked into the garage, I thought I smelled something funny. My first thought was Travis’ disgusting hockey gear, but no, it didn’t quite smell right. I was still wondering when I opened the laundry room door and was greeted by this:

I cannot even begin to describe how gross it was. The smell was beyond words. Poopy pawprints were on the door, the wall, the washer and dryer – everywhere.

I put the dogs outside, entered the house through the front door, and changed into old work clothes. I put my hair up, grabbed some rubber gloves, found a sheetrock mask of Trav’s, and got out the paper towels, a bucket and a sponge.

And Denver just had to set a record high of 99 degrees yesterday so I had sweat rolling down my face as I scrubbed and tried my darnedest not to gag. After I was done in the laundry room, I took the dogs one by one and gave them each a bath. Ick.

The room still stunk this morning. Once Travis gets home, we’re going to clean the crap out of it – literally.

So that’s why I’m taking Charlie to the vet. No dog in their right mind (or right bowel?) should ever do that. Poor Katy was subjected to Charlie’s poopy mess for who knows how long. And Charlie has been slinking around all night and all morning, like she’s incredibly embarrassed that I caught her deprecating in her own sleeping space. It happens, Charlie. Once. It happens once. It better not happen again…

I’m scared to go home.

A Day in the Life

I always find it interesting to see what other people’s days look like (shoutout to SUAR!) so here’s one of mine (though not every day involves so much dog drama, clothes changing, and bean throwing. 🙂)

2:45 am — Get up to pee and decide to let the dogs out while I’m up. Charlie does not go. Go back to bed.

4:30 — Hear dogs moving around. Get up and feed them so I can leave them in the laundry room. Go back to bed.

4:45 — Hear dogs whining. Get up and let them out of the laundry room. Go back to bed.

4:50 — Realize that Charlie might have to pee now so get up to take her outside. She doesn’t go.

4:55 — Come back inside to see that Charlie didn’t go outside because she had already gone inside, right after getting out of the laundry room. Clean pee up and go back to bed.

6:00 — Alarm goes off for the first time.

7:00 — Finally get up after many, many hits to the snooze button, and eat breakfast.

“Do I look like a trouble maker?”

“Not to me.”

7:15 — Evaluate my hair in the mirror and decide to wash it. Hop in the shower.

7:25 — Do my hair and makeup.

7:40 — Get dressed in Outfit #1.

7:50 — Set up iron and ironing board for wrinkly shirt. Make lunch and snacks while waiting for iron to heat up.

8:07 — Get dressed in Outfit #3. Winner. (Or I just no longer care.)

8:10 — Sit down for a short time in the Word.

8:25 — Make iced coffee while talking to the husband.

8:33 — Leave for work.

9:05 — Arrive at work. Our campus is comprised of four buildings like this one:

3:00 pm — Actually have work to do! Last 2 hours fly by.

5:05 — Time to go home! Traffic is bad but there are pretty views.

I can see Denver from my car!

5:35 — Arrive home. Let pooches out to pee while I check on our zucchini jungle garden.

Mmm… sweet cherry tomatoes.

Yes, our winter squash grew through the fence.

5:45 — Feed pooches. Travis gets home.

6:00 — Decide to do an open water swim so we change and leave.

6:35 — Get to Big Soda swimming beach.

The water’s actually not that bad once you get used to it. Decide that the water is too choppy for an extended swim (hello, water up the nose!) so do roughly 750 yards and get out.

7:10 — Drive home and take a shower to rid me of algae and stank. Eat Stacy’s Pita Chips while writing grocery store list.

7:40 — Travis takes dogs for a ride to the auto parts store and I go to the grocery and liquor stores to buy some dinner necessities.

8:15 — Get home and start making dinner (Spicy Crab Salad) while Travis grills some corn on the cob and waters the lawn.

8:20 — Crack open a glorious Mike’s Hard Black Cherry Lemonade. Hits the spot.

8:35 — Finally sit down to dinner. Delicious!

8:55 — Leave the dinner table in a huff after an intense debate on whether healthy eating involves carbs (one of those conversations where Travis and I probably agree but just can’t seem to communicate in a way that we both understand).

9:00 — Make Travis not do the dishes because he faked throwing my black beans in the garbage. (Hey – I was angry and nonsensical and didn’t want any innocent food to meet an unfortunate end.)

9:10 — Dishes done. Watch Downsized for a bit, feeling pretty good about our financial choices.

9:45 — Decide I need to go to bed so brush my teeth, make the bed (I can’t stand getting in a messy bed!), and soon after, Travis follows.

10:30 — Finally asleep, after laying awake thinking about what we’re going to do with the dogs on our upcoming trips, what my Warrior Dash outfit is going to look like, and how nervous I am to freeze my butt off during the Oly Tri in just a little over a week.

Whew!

Back from Eating…er, Vacation

Travis and I got back last night at 11:30 from our week-long extravaganza in Minnesota. We are exhausted and stuffed.

I will give a full update, complete with photos, later this week when I have rested up and am thinking clearly again. Right now, I’d like to talk about the thing that I always do way too much of on vacation: eating.

If you look back on my post about healthy eating, you can see that I like to eat a little bit all day long. I don’t do big meals.

Well unfortunately for me, both Travis’ and my families do.

Here’s the typical rundown for meals:

Breakfast: french toast, sausage, fruit, coffee, milk

Lunch: sandwiches, fruit, lettuce salad, chips

Dinner: pork chops, beans, fruit, cooked veggies, chips

I’ve read that you eat more when you have more options. That’s why you can’t walk out of a buffet without feeling like you’re going to puke (that, and perhaps some health code violations). I am the poster eater of this fact. Seriously, lunch time would roll around and even though I was just barely hungry, or not hungry at all, I’d still eat. What if I get hungry later when no one else is eating? What will I do then? were the thoughts running through my head. Then there were the copious amounts of mini candy bars, licorice, and pop I consumed just because I was on vacation. Calories don’t count then, right?

Another kicker was that while I had the ambition and desire to workout on vacation, there were 2 hiccups: 1) I felt guilty spending time working out instead of being with Travis’ or my family. and 2) The deer flies were horrible. I did 2 miles on our first morning there and got 10-12 bites on my back, which turned into lovely red bumps. It was a good look for a strapless dress at a wedding.

All that to say, it’s no surprise that I have returned to my “normal” life feeling the Goodyear blimp. I am SO ready to be back to healthy eating, normal portions, and consistent exercise. The only thing I had energy for last night when we got home was to carry all our stuff in the house, drop it and go to bed. So tonight will be spent unpacking, doing laundry and going grocery shopping and then tomorrow, I’ll get back on the workout wagon. The Steamboat Oly Tri is less than a month away!

The Truth About Healthy Eating

As a person who is very interested in health and fitness, I read a lot of magazines, newspaper articles, and books about the topic and I frequent a health and fitness message board. I’m even contemplating going to back to school for a nutrition degree (but that’s a topic for another post).

While I don’t follow any strict eating regimen like Paleo or Clean Eating, I do make most of the decisions about what I eat following the mantra of Michael Pollan, author of In Defense of Food: “Eat food. Not too much. Mostly plants.” What that means for me is:

  • I eat real food, not “food products” as he calls them, as much as possible.
  • I eat when I’m hungry and stop when I’m full (this is also the mentality behind Intuitive Eating).
  • I eat a lot of fruits and vegetables.

This is what a typical day’s menu has looked like recently:

Pre-Workout (5:00 am)

1 slice of whole wheat bread with 1 tbsp creamy peanut butter (I don’t eat natural peanut butter because it’s more expensive and the partially hydrogenated oil in un-natural peanut butter is so negligible, they don’t even list trans fats on the nutrition facts.)

Breakfast (7:30)

1-2 cups of cereal (common varieties are Honey Bunches of Oats, Frosted Mini-Wheats, Kashi GoLean Crunch!) with ½ cup blueberries and 1.5% milk from Royal Crest Dairy

Caffeine Fix (9:00)

1 ½ cups iced coffee with 2 packets of artificial sweetener and 1-2 tbsp fat-free liquid crack (aka Coffeemate hazelnut creamer)

Morning Snack #1 (10:00)

Banana

Morning Snack #2 (11:00)

Light flavored yogurt

Lunch (12:00 pm)

1 portion of leftovers from dinner on a bed of spinach or a spinach salad/wrap with blueberries, dried (sweetened) cranberries, feta cheese, slivered almonds, low-sodium ham, and Kraft poppyseed dressing (my favorite salad EVER.)

Afternoon Snack #1 (2:00)

Apple

Afternoon Snack #2 (3:30)

6 generic Triscuits, 1 oz cheddar cheese

Dinner (6:30)

Since this varies a lot (and my other food is usually pretty much the same), I’ll give a few common ones:

  • Homemade pizza (whole wheat pocketless pitas with store-bought pizza sauce, turkey pepperoni, artichoke hearts, black olives, mushrooms, and part-skim mozzarella)
  • Elk burgers on whole wheat buns, baked sweet potato fries sprinkled with sea salt
  • Butternut squash and sage lasagna, garlic (white) bread, spinach salad

Late-night treat (2-3 times a month when training, 4-5 times a month in off season)

Glass of wine (or a serving of full-fat ice cream)

As you can see, I don’t eat perfectly. I would go crazy if I did. It’s too hard and too expensive to buy all of the “healthiest” versions of all foods (not to mention that sometimes the refined foods are simply more delicious). My main focus is on eating a lot of fruits and vegetables and buying the whole-grain/least processed version of everything that is reasonably priced and that I enjoy eating. (Eating healthy foods you don’t enjoy is not fun or sustainable.)

If you’re curious, I eat about 2,000-2,500 calories a day when training; 1,700-2,000 when I’m not.

Over the course of my informal research, I’ve noticed that there are a lot of misconceptions about healthy eating floating around in the general populace. Lies like “Eating healthy is expensive” and “You have to stop eating donuts for breakfast.” In general, generalizations are wrong. 🙂

To set the record straight, here is what my experience has been with eating healthily (but I am not a registered dietitian so take what I say with a grain of salt-free Mrs. Dash).

1. I spend less money at the grocery store on healthy food than I did on processed crap.

On average, I spend $40-75 a week on groceries for 2 adults (not including condiments like ketchup and olive oil). I buy mostly produce (bananas, apples, oranges, spinach, potatoes, onions, green beans, asparagus, blueberries, zucchini, yellow squash, etc.). I also buy whole wheat pasta, whole wheat crackers, low-fat yogurt, low-fat milk (we get ours delivered), low-sodium deli meat (Boar’s Head), chicken when it’s on sale (for red meat, we eat elk that Travis shot), and whatever additional ingredients I need for the 3 dinner recipes I chose for the week.

My guess is that people think eating healthy is expensive because they don’t know to not buy certain produce when it’s out of season. I don’t spend $5 a pound on grapes, buy $6 pineapples, eat gold-plated raspberries, or spend $10 on a 2 oz bag of dried apricots. If you pay attention to prices and buy the cheap and in-season produce, eating healthy is actually very affordable. Vegetables are notoriously cheap almost year-round. You can’t buy a couple pounds of potatoes, onions, and carrots and tell me they were expensive.

Also, check out grocery stores like Trader Joe’s and Sunflower Farmer’s Market that have bulk bins. I now buy tons of stuff from bulk bins that I would have bought at a regular grocery store and spend way less: flour, dried fruit, trail mix, popcorn kernels, couscous, granola, etc. Just recently, I bought 50 oz of flour for $1.50 and ½ lb of dried mango for $2.00.

I also think that people get hung up on the superfoods. These are a marketing ploy. Did you know that grapes have just as many antioxidants as acai berries? They’re also cheaper. I love this quote from the Cooking Light article called The Truth about Superfoods:

Almost everything in modern nutrition research suggests that your whole diet—which should be a varied one, containing lots of plants, with moderate amounts of total fat and salt—is the thing to focus on. Dark chocolate, edamame, and green tea do not a whole diet make.

I don’t follow food trends. I didn’t jump on the pomegranate or acai berry bandwagon and I won’t jump on any in the future. Usually, these products are overpriced and their health benefits, while real, are very comparable to benefits from other, more common (and cheaper) produce.

After reading In Defense of Food, I stopped giving certain vegetables the cold shoulder and adopted the opinion that if it grows on a plant or in the ground, it’s good for me. Vegetables like corn and russet potatoes have gotten a bad rap from the health nuts over the years because they supposedly don’t have much “nutritional value.” The truth is, corn is high in fiber and potassium and russet potatoes have fiber and protein. (Take that sweet potatoes!) Moreover, Michael Pollan makes the argument that we don’t know how different vitamins and minerals in natural foods work together. A less-processed, more-natural diet is always better. Choose the corn over vitamin-fortified, protein-injected health food.

2. I hardly ever get sick.

When I was in high school, I got sick all.the.time. Even through most of college, I got sick quite often. When I got married, learned/had a reason to cook and started eating things besides cereal and sandwiches, I started eating a lot more fruit and vegetables. I am now a believer that an apple a day keeps the doctor away: since moving out to Colorado on Labor Day weekend of 2007, I have only been sick twice. Once I had a cold and the other time, I contracted H1N1 (eeee…). I think that’s a pretty good track record.

If I start getting the feeling in my throat like I’m on the verge of getting a cold, I dial up the amount of fruit and vegetables I’m eating and try to get more sleep. I like to think I have staved off many a cold with this strategy.

3. I maintain my weight easily and happily.

I am not a carb-deprived, pill-popping, drooling-over-donuts-in-the-shop-window, I-can’t-eat-that-because-I’m-on-a-diet monster. I eat food. I love food. Even donuts. Especially donuts.

But there’s a balance. If you want to discover what that balance is, read Intuitive Eating. I cannot praise this book highly enough. It changed my eating life (it didn’t change my whole life — Jesus did that). Starting in high school, I had a friend who did not have a healthy relationship with food and it rubbed off on me. I used food as comfort, a reward, and an activity to do when I was bored. Over time, it morphed into the enemy that constantly whispered to me about how much I wanted it but couldn’t have it. I religiously watched what I ate, tracked every calorie, but then frequently overate, to the point where I was so full that all I wanted to do after eating was lie down.

Finally, I got sick and tired of counting calories and obsessing over everything I put in my mouth. I was sick of having food control me. I was sick of having no willpower. So I read Intuitive Eating for the second time in the fall of 2009 and actually did what it said. I let myself eat donuts, Twizzlers, ice cream, wine, and white bread (gasp!) when I wanted them, making sure to only eat when I was hungry and to stop when I was full.

At first, it was a little scary. What if I gain weight? But over time, I learned to eat what I wanted and to make sure I really wanted what I was eating. If something didn’t hit the spot, I didn’t eat it. If something had looked better than it tasted, I didn’t eat it. If I was comfortably full, I didn’t go for dessert anyway. I knew it I would enjoy it more if I wasn’t trying to squeeze it in between my spleen and liver.

It worked. The first time I really noticed a change in my relationship to food was Thanksgiving of 2009. My parents were out in Colorado visiting and my mom and I had cooked up an entire Thanksgiving feast for the 4 of us with all of my favorites: stuffing, mashed potatoes and gravy, dinner rolls, jello salads. I ate until I was comfortably full and then did the unfathomable: decided to not eat pumpkin pie afterward. I knew that if I did, it would push me over the edge to being uncomfortably full. And I hate that feeling.

I felt like I was in a twilight zone as I decided to just have a cup of coffee. I had energy to do dishes and move around after the Thanksgiving meal. You mean I don’t have to feel like I’m exploding? It was revolutionary for me.

Fast forward 2 ½ years, I hardly ever feel uncomfortably full anymore. I still do slip up once in a while when there’s a particularly tempting meal or treat, but more often than not, I stop at a good point because I know that food won’t make me happy, even though according to David Kessler, my body’s wiring tells me it will.

4. I still eat donuts, ice cream and French fries — occasionally.

I couldn’t survive without them! I think this is the #1 biggest mistake people make on diets: they don’t let themselves eat anything that is considered “bad.” (This is one of main tenets of Intuitive Eating: there are no “good” or “bad” foods. There are no food police.) The #2 biggest mistake people make is not eating enough food when they’re trying to “eat healthy.” Eating healthy does not mean eating perfectly 100% of the time and it doesn’t mean always being hungry.

But that’s not to say I don’t exercise any self-restraint or discretion. Generally speaking, when I have a craving for empty-calorie deliciousness, I don’t go out right away and indulge. I let it simmer for a few days. Usually, I have an opportunity later on to go out for ice cream with my girlfriends or for a donut with Travis. Turn your splurges into social outings. With this approach, I splurge 2-4 times a month (and by splurge, I mean eat something that has low nutritional value and high calorie/fat content).

If I’m in need of a snack at 3:30 pm on a slow-moving Thursday afternoon, and the vending machine is my only option, I pick the healthiest thing I can enjoy eating. (Lucky for me, the vending machine here has Stacy’s Simply Naked Pita Chips. Score!) Picking the healthiest thing, even though you don’t like it or it’s not really what you want, isn’t a good idea because it won’t leave you satisfied and you’ll want to eat something else (yet another idea from Intuitive Eating). If you’re thinking, Well heck, the only thing I’d enjoy eating is a candy bar, then get one. Just make sure it either has nuts in it (which will make it more filling) or it’s low in calories (so it won’t destroy your daily balance).

Eating healthy doesn’t require perfection. You don’t have to set up monstrous goals that require an all-or-nothing commitment. It’s a consistent effort to make smart choices. It’s maintaining a balance (get a shake or fries, not both). Often times, it’s choosing the lesser of two not-so-great options (they are not “evils”). In order to eat healthy for life, you need to be able to adapt and react to the different situations life throws at you. You can’t throw in the towel if you happen to eat 10 cookies in one sitting. Brush off the crumbs and make a better decision now.

 5. I still get to eat good food.

I honestly enjoy eating healthy. I love the foods I eat and I love the way I feel when I’m healthy. I love fruits and vegetables. I admit that it’s very convenient that I’m not a picky eater (except when it comes to meat) and that it would be harder for a picky eater to eat healthy. But it’s not impossible.

One thing I’ve done to broaden my horizon is to intentionally try new foods. I’ve discovered some things that I really like (eggplant, edamame, wheat berry, butternut squash, sage, couscous, pistachios) and other things that I don’t like (kale, brussel sprouts, mango, quinoa, shallots). Experiment. Try new foods and new ways of preparing familiar foods. Puree cauliflower and carrots and add them to soups, muffins, and pasta dishes. My general rule of thumb is to eat some fruit or vegetable at every meal and for at least two snacks a day.

All this is to say, people make healthy eating a lot harder than it has to be. If you’re currently not making the best food choices, don’t do a major overhaul. Start small, perhaps with cutting down on or eliminating the amount of liquid you’re drinking each day that isn’t water. Eat an apple with an ounce of cheese for a snack instead of a bag of chips. Learn what portion sizes look like. Find out the nutrition information for your “usual” and make a better choice. Bottom line is, figure out what works for you.

But don’t come to me complaining about how hard it is to eat healthy. Diets are hard. Restrictive eating guidelines are hard. Eating healthy is different. It may take a while to get the hang of it, but once you do, it’s the new normal. I will admit it takes consistent effort, but so does going to doctor’s appointments for diabetes and cholesterol meds. I’m just sayin’…

Yesterday, I finally biked to work for the first time ever. I had forgotten to bring my clothes to work the day before so I had to bring a big backpack with my clothes, toiletries and makeup, bike lock, lunch, and towel (I wasn’t sure the locker room had ones that contractors could use – we kind of get the shaft around here – but they do). So my backpack was a little on the heavy side but it has the straps that go around the waist and across the chest so it didn’t move around too much.

I only took 2 wrong turns, which were quickly corrected. I’m sure that I would’ve been very lost if I hadn’t driven the route beforehand so that I knew generally where I was supposed to be going. The part that was the most confusing was being on the bike trails (though it was also the most enjoyable because there were no cars to worry about).

The most notable part of the ride? The hills. Holy crap. I got dominated. It was sheer grit and stubbornness that got me up those hills. (For those of you who are intense bikers, you probably think I’m a wuss to whine about a 3% grade that lasts for 1.5 miles but for me, it was hard! It probably didn’t help that I had done squats and lunges for the first time in 5-6 months the day before and woke up very sore.) According to MapMyRun, there are two main climbs on this route: on Carr Street (above) and then on Simms Street (below).

Carr Street was the shorter, but steeper of the two. I was huffing and puffing and seriously considered walking my bike. But I didn’t. This is when doing endurance sports is purely mental. Your entire body is saying STOP but you keep pushing. It was nice to have a bike lane on this hill, just in case I was a swerving spaz.

 The hill on Simms was not so kind to me though. Giant hill, no shoulder (see pic – though it doesn’t do the hill justice). As cars were whizzing by at 50 mph and I was trying to not swerve either in front of one or into the gravel shoulder, I was repeating Jerry Seinfeld’s bit on scuba diving to myself: “Just don’t die… don’t die, don’t die, don’t die… there’s a rock, there’s a fish, who cares… just don’t die…” 

I didn’t die. And I made it to work on time, though it took me 1:13:25 to go 13.8 miles.

But when it came time to bike home, this was the sky:

I was still going to bike home, even after Travis told me it was raining in Golden. It wasn’t raining in Broomfield at that very moment so my stubbornness kicked in and I decided it would be an adventure.

I had just gotten my sweaty bike gear back on (note to self: don’t forget to bring an extra sports bra to work next time! EW!) when Travis called back and told me about tree limbs being ripped off, flash flood warnings, 40 mph gusts, and rain everywhere. “I’d feel a lot better coming to pick you up,” he said. “FINE!” I raged.

Let me explain my horrid reaction: My sensible self appreciated my husband’s concern and willingness to drive 30 minutes one way to come pick me and my little ole bike up. My nonsensical self wanted to bike home at all costs. I had been thwarting in my first attempt at biking to work and now this? I would not allow it. Sensibility (and my husband) won the day. And I will say that I was very happy (later) that I did not bike home. It would’ve been miserable and probably deterred me from ever riding my bike in to work again.

While we were up in that neighborhood with the car, I suggested we get Chick-Fil-A for dinner. So we did. It was delicious (though I’ll warn you to not get their Chicken Caesar wrap if you don’t like massive amounts of Parmesan cheese – I like it but not that much so I ended up eating only 3/4 of it).

After tidying up the house in preparation for cleaning it tonight for our BBQ tomorrow, I went to DSW and finally bought my new sandals!

After trying on something like 15 different pairs and styles, I decided these would work well with both black and brown tones, they have a slight heel and some good cushioning (advice from my friend B), and they’re freaking cute. They do feel very different than flip flops, since there’s nothing to hold the front of my foot in, but I’m sure I’ll get used to them.

I saw a few of the different options I had been looking at online in the store but after trying them on, realized that they either didn’t fit my foot well or I didn’t like how they “wore”. So I’m glad I went to the store instead of buying online! That’s generally the way I operate. I usually only buy stuff online after trying it on in a store. But I do make exceptions if it means I get a good deal and free shipping.

Keeping an Eternal Perspective: Clothing

{This is the second installment of this weekly series.}

For the past several years, I’ve been wrestling through the practical implications of my faith in Christ. If I say I desire to glorify God and that He’s my greatest treasure, what effect will those declarations have on what I buy, how I spend my time, and what my goals are? While God has given me a lot of insight and I am more at peace about these things that I was before, I still struggle with feeling guilty for buying new clothes, spending 6 hours a week training instead of volunteering, and doing things I enjoy just for pleasure’s sake.

Last weekend while we were backpacking {sorry that I haven’t posted pics yet – last night was busy!}, I had some time Sunday morning to sit alone with my Bible. The passage in Matthew 6 caught my eye:

Do not lay up for yourselves treasures on earth, where moth and rust destroy and where thieves break in and steal, but lay up for yourselves treasures in heaven, where neither moth nor rust destroys and where thieves do not break in and steal. For where your treasure is, there your heart will be also.

“The eye is the lamp of the body. So, if your eye is healthy, your whole body will be full of light, but if your eye is bad, your whole body will be full of darkness. If then the light in you is darkness, how great is the darkness! “No one can serve two masters, for either he will hate the one and love the other, or he will be devoted to the one and despise the other. You cannot serve God and money.

“Therefore I tell you, do not be anxious about your life, what you will eat or what you will drink, nor about your body, what you will put on. Is not life more than food, and the body more than clothing? Look at the birds of the air: they neither sow nor reap nor gather into barns, and yet your heavenly Father feeds them. Are you not of more value than they? And which of you by being anxious can add a single hour to his span of life? And why are you anxious about clothing? Consider the lilies of the field, how they grow; they neither toil nor spin, yet I tell you, Solomon in all his glory was not arrayed like one of these. But if God so clothes the grass of the field, which today is alive and tomorrow is thrown into the oven, will he not much more clothe you, O you of little faith? Therefore do not be anxious, saying, ‘What shall we eat?’ or ‘What shall we drink?’ or ‘What shall we wear?’ For the Gentiles seek after all these things, and your heavenly Father knows that you need them all. But seek first the kingdom of God and his righteousness, and all these things will be added to you.

“Therefore do not be anxious about tomorrow, for tomorrow will be anxious for itself. Sufficient for the day is its own trouble.”

Set your mind on things that are above, not on things that are on earth.

These verses showed me the following:

1. God gave me these convictions – I didn’t come up with them on my own.

Ever since I started to analyze my motives and why I do certain things and don’t do other things, God has been changing the way I look at the world. It started out as guilt from buying another $25 t-shirt that I didn’t need when that same money would buy food for a month for a kid over in Africa. It morphed into guilt from doing anything with my time that I alone enjoyed – I was convinced that that was the epitome of selfishness. I couldn’t escape the guilt. It was everywhere. A caramel macchiato from Starbuck’s. A pedicure. A good book. A nap.

But looking at these convictions a different way, I see them as God’s way of inviting me into a life of infinite joy (to quote C.S. Lewis again) – a life of love, selflessness, freed from the snares of material possessions and keeping up with the joneses. He has given me a desire for a simple life:

  • to wear the clothes I own
  • to make wise purchases (after researching options nonetheless!)
  • to fully use everything I do spend money on (and make sure I’ll fully use it before buying it)
  • to treat my possessions well so that they last
  • to only replace things when they need replacing
  • to make the effort to be creative in making things last longer

Anyone who knew me in college would not recognize the girl writing this post today. I am that different in my approach toward money. And God has shown me that this is His work in my life, refocusing my attention on things that are unseen and eternal, rather than things that are seen and transient.

Oswald Chambers’ devotional yesterday said it perfectly:

God gives us a vision, and then He takes us down to the valley to batter us into the shape of that vision. It is in the valley that so many of us give up and faint. Every God-given vision will become real if we will only have patience. Just think of the enormous amount of free time God has! He is never in a hurry. Yet we are always in such a frantic hurry. While still in the light of the glory of the vision, we go right out to do things, but the vision is not yet real in us. God has to take us into the valley and put us through fires and floods to batter us into shape, until we get to the point where He can trust us with the reality of the vision. Ever since God gave us the vision, He has been at work. He is getting us into the shape of the goal He has for us, and yet over and over again we try to escape from the Sculptor’s hand in an effort to batter ourselves into the shape of our own goal.The vision that God gives is not some unattainable castle in the sky, but a vision of what God wants you to be down here. Allow the Potter to put you on His wheel and whirl you around as He desires. Then as surely as God is God, and you are you, you will turn out as an exact likeness of the vision. But don’t lose heart in the process. If you have ever had a vision from God, you may try as you will to be satisfied on a lower level, but God will never allow it.

It has been a long, hard struggle to get to where I am in accepting that God is in this. That God is calling me to a simple lifestyle and to give up caring about fashion, money, beauty, decorating, etc.

That said…

2. Sanctification looks differently for everyone.

I have just recently realized this on an even deeper level. For so long, I had been frustrated with feeling guilty for shopping “just because” because I had a list of reasons why I believed I could shop in faith. We tithed every month, I wasn’t spending an extravagant amount of money, and the biggest one, I saw other Christian women doing it. If they could do it, why couldn’t I?

A recent situation opened my eyes. There is a young married couple at our church whose wedding I attended. The toasts given by their families and friends all praised this couple for being very godly and strong in their faith. The time I had spent around them in a group setting seemed to agree with those assessments. I viewed this couple as two people who “had it together,” especially in their approach to money (which moved them up a notch in my book). Then I spent some time one-on-one with the woman and heard about their marital struggles, ones very common to young married couples. I realized that they were just human too.

And that got me thinking… those women with the latest fashions at church – I don’t know what’s going on in their hearts. They very well might be able to buy new clothes in faith, but that also could be an area of their lives that God hasn’t yet refined and sanctified.

All that to say, I can’t judge which of the Spirit’s promptings I’m going to follow or not based on what other people are doing. Oswald Chambers’ devotion for June 28 says, “At first, Jesus Christ through His Spirit has to restrain you from doing a great many things that may be perfectly right for everyone else but not right for you.” These things that I have been fighting may be perfectly right for others to do, but not me. I have to pay attention to my personal convictions.

All this time, I had wanted to go back to the way things were before. I was rejecting this new way to live. Instead of viewing it as God’s invitation to me into greater, deeper joy resulting from letting go of materialism and my own assessment of What I Should Be Able to Do With Christian Freedom, I had been fighting it and thinking there was something wrong with me, since I was struggling with this and no one else was. But as I drove to work yesterday, I realized that in doing that, I was assuming that I should be “above that.” I should be above materialism and selfishly using my time for myself. Well guess what? I’m not. God wasn’t fooled for one moment either. He knew all along what I’m really like on the inside. The joke’s on me.

3. For me, buying new things should be the exception and not the rule.

You remember my sandal post from a while back? I still haven’t bought any. I can’t decide which ones I want. Actually, I had decided which ones I wanted but then they were out of my size. Boo. I just don’t want to buy the wrong ones and then regret my decision. So I’m at a standstill on that one.

But I don’t feel guilty about wanting those sandals. The difference between this purchase and other past purchases that have given me guilt is that: 1) I’ve been wanting these sandals since I started my new job 2 months ago and 2) They wouldn’t be just another version of something I already have 10 of. So those are my new guidelines for purchases (notice that I said guidelines, not rules): Wait until I know of something I would really like and would be very useful to me. Research the options and pray for the Spirit to convict me if I shouldn’t buy them. Go purchase said item sans guilt. My other strategy is to mention all of the things I would like to Travis “just in case someone asks what I’d like for my birthday.” 🙂

My cousin is getting married on July 30th and I’ve been thinking about buying a new dress for the occasion. I might go peruse a thrift store to see if there’s anything good but otherwise, I feel like the best decision would be to wear a dress I already own – I have one that is great for summer weddings and I’ve only worn once or twice.

Oh and I’ll wear my new sandals. (I’m going to go look at some tonight.)

What does all of this have to do with keeping an eternal perspective?

For me, the question underlying all of this is: Where does my happiness lie? Is my happiness wrapped up in having cute clothes? Or is it in knowing that Christ died for me and I’m going to heaven someday? Is not life more than food, and the body more than clothing? When I see a chunk of my paycheck every month going to our church, Campus Outreach, and our Compassion child, am I thankful to God for allowing me to participate in growing His kingdom? Or do I wish I could use that money to go on a trip to Hawaii?

Christ didn’t say to store up treasures in heaven instead of on earth just because that’s a good thing to do, or because they really need more treasures up there. Instead, He said this: “For where your treasure is, there will your heart be also.” God knows our humanity. He knows that we focus on what we treasure. Bike to Work FAIL.

Today was Denver’s Bike to Work Day. I have never biked to work before but have always been intrigued by the idea. And since I am now training for an Olympic triathlon and needing to bike rides of 20-30 miles every week, I figured it would be a great way to get in my training, as well as my commute (it’s 13.5 miles to work by car or bike).

I spent a couple hours at work yesterday getting everything mapped out, typing up directions and stowing my work clothes for today in one of the fitness center lockers. I drove my route home last night, to get better acquainted with the streets and make sure that everything looked pretty safe. I was so excited and nervous that I went to bed thinking about it and woke up thinking about it. I packed up my Camelbak this morning with my smaller-than-normal lunch, flip-flops, cell phone, phone charger, camera, photo ID, credit card, chapstick, deodorant, and makeup. I had my helmet, water bottle and sunglasses. I wore a bright orange t-shirt over my long-sleeve gray tech tee.

I forgot just one small thing.

Check the bike.

I didn’t think it would be an issue since I had just biked 20 miles on it Sunday with no issues. But now that I think about it, the chain was making some weird noises during that ride – so much so that Travis asked me what the noise was. I said the chain was rubbing like it does when it’s in the highest or lowest gear, ignoring the indicator on my shifter showing that the chain was actually on a middle gear.

I left the house at 6:35 and followed my route north. Since I haven’t biked on actual streets very much – this was maybe the third time? – I was approaching a stoplight when I realized (too late) that I should be in a lower gear in order to get started more easily. So as I was braking, I downshifted twice without pedaling, so that I didn’t *actually* shift.

Big mistake.

It may have just been a coincidence that the problems started right after that, or it may have been the cause.

The Magnificent Sliding Chain

But my chain was jacked up big time. It was sliding all over the place, trying to choose between 2 or 3 different gears. I pulled into a parking lot and tooled around there for about 5 minutes, changing gears to see if I could get my chain back on track. No luck. Then I got off and looked at the chain. I didn’t see anything obviously wrong and know next to nothing technical about bikes so as much as it disappointed me, I knew the smart thing would be to go home. I didn’t want to get stranded on the side of the road, or worse, ruin my bike.

As I pulled out of the parking lot to where I was going to turn around, the chain seemed better. Maybe, just maybe, I can still make this work. I continued on my route for another mile. Things were good. Chain in place. Then I encountered a hill. I tried to tackle it without downshifting but I couldn’t. So I shifted down one gear. Still good. Down another. Still good. Down another.

::Crunch… crunch…crunch::

Crap it.

I turned off on a side street, resolving that it just wasn’t in the cards for me to ride my bike to work today.

I got home and went into the office to escape my dogs’ excitement and mope. But then I realized, it was only 7:10 – if Travis could fix my bike in 10 minutes, I could still bike to work. So I went and woke Travis up and being the sweet, dutiful husband, he rolled out of bed early to help me futz with my bike. But no matter what we adjusted, poked, moved, or tested, the chain refused to work. It needs professional help.

So I did not get to bike to work today. I’m bummed. But I’m not deterred! I WILL ride my bike to work one day soon.

My sad little bike computer only read 5.759 miles by the time I took a shower (my short bike ride + ride on bike trainer to figure out what was wrong) when I had been expecting something more like 27.xx miles. What makes me more frustrated is that we have our church group tonight from 6 to 9 so the morning was my main workout window. I’m still going to try to squeeze a short run in after work so that the day isn’t a total bust. But I’m thoroughly bummed about this whole thing.

So I called up an old pal for consolation:
